Champagne Drappier
CLAREVALLIS Extra Brut
The all new cuvée from Maison DRAPPIER is called Clarevallis, a tribute to the abbey of Clairvaux..
Clarevallis:
-
- From its color, to the nose and in the way it echos on the palate: it is a surprise in the universe of Champagne
- Taste of the champagne of yesteryear – a grower-Champagne by definition
- The most structured and expressive NV Champagne from Drappier, Pinot Noir dominant with 5% Pinot Blanc (Blanc Vrai)
- Blanc Vrai is used here as an amplifier: it amplifies the vinous character, the body, the length and the multiple-layers structure.
- A 3.5g/l dosage aged for 15 years in oak
Blend:
-
- 75% Pinot Noir
- 10% Meunier
- 10% Chardonnay
- 5% Blanc Vrai.
Technical:
-
- Organic farming.
- Ecocert certification.
Vinification:
-
- Only the first juices are selected.
- Very low sulfur (20mg/l).
- Dosage: 4 g/l.
- 12% Alc.
Tasting Note: Very fine and persistent bubbles. Notes of elderberry and violet. Limestone minerality rounded off by the pulp of Pinot Noir dominating the blend. A tension in the mouth balanced by a discreet dosage and pretty bitters. Nice complexity. It is a fresh and very delicate champagne.
