Vineyards:

    • 37% Stoney Vine Estate

    • 14% Southwind Estate

    • 29% Breezy Slope

    • 14% Stone Tree

Techniques:

    • 14-23 day maceration.
    • 14% whole cluster.
    • Aged on fine lees and racked once before bottling.

Oak Program:

    • Aged in 14% new French oak puncheons, 76% neutral oak puncheons.

Wine Analysis:

    • 5.2 grams/L,
    • Total Acidity,
    • 3.92 pH,
    • 14.2% Alcohol

GRAPE VARIETY:

    • 97% Syrah, 3% Viognier (co-ferment)

FOOD PAIRINGS:
